If you prefer raw macadamia nuts over roasted because you believe that roasting reduces the nuts’ nutrients, please read on. A comprehensive study published in 2021 by “Food Science and Nutrition” journal concluded the opposite. Dry roasting increases oxidative stability, decreases the nuts’ moisture, and doesn’t alter nutrient content.
