• Take a 10×20 plant propagation tray and fill it up with 2 inches of soil • Make sure the soil is free of debris, and the surface is flat • Wet the soil thoroughly • Take 1oz (30ml) of arugula seeds and equally distribute across planting surface • Cover the container to block the light and place it in a low-light, cool area (70F/21C) • Keep out of light for 72 hours, and mist with a spray once, daily • On day 4 or 5 microgreens will reach 1 inch. Uncover and place into a well-lit area • When greens reach 3 inches and produce open leaves, they’re ready for harvest • Cut microgreens about ¼ inch above the soil • Store dry. Enjoy up to 7 days
